Salad Days

I'm having a week where I am emptying the freezer to defrost it, emptying the fridge to give it a good clean, and emptying the cupboards because hubby says some of the tins say "Give the Kaiser Hell" on them! They are so old!!

So when it was hot, I made us a massive salad. I used lettuce, tomato and cucumber for starters, but added cold boiled new potatoes, chopped boiled eggs, croutons made from some gorgeous fancy bread sticks that had fennel seeds on, but had gone rock hard in the freezer, but with a quick spray of olive oil and 5 mins in the oven, they crisped up. I topped it off with a couple of tins of Mackerel and Tuna, Basil leaves and a dollop of Pizza Express Light Caesar Dressing (my current favourite).


So was it Nicoise, Panzanella or Caesar? Who cares - it was very tasty.

Shame I don't like tuna or mackerel, though I suppose I could substitute chicken. Sounds great anyway hope you enjoyed it.

Looks like a lovely salad, Diane - we've been making bowls of salad for lunch over the weekend but it was back to a warm meal this evening:)

Whatever it's called it sounds very healthy!
I'm very impressed with your bird knowledge for one so recently and RSPB member, G thinks it was a female thrush becuase apparently they have lighter colour feathers than the male.
Although we live by the water it's the docks and a busy river rather than a proper seaside, but we try and make the most of it.

Definitely "Salade Diane"! Looks gorgous! Reminds me I must have a look through the fridge.

We had to get a new fridge/freezer a couple of years ago, and the very best thing about them is that neither needs defrosting - they do it all themselves! Wonderful! :) No more lugging bowls of hot water about, fitting them into the freezer, hacking off bits of ice, ands mopping a thoroughly wet floor afterwards!!

Salad days are my favourite ones! I usually have lettuce, tomatoes, cucumbers, carrots,cheese, tuna/ham.

Looks lovely - we have been eating similar this week. I am loving jerseys in salad at the moment. In fact I think I've had then for a whole week!
