Yorkshire Parkin

Recipe from my old school cookery book.

4oz (100g) Medium Oatmeal
2 oz (50g) SR Flour
small teaspoon of ground ginger
2 oz (50g) soft brown sugar
4 oz (1oog) Golden Syrup
1 Desertspoon black treacle
1.5 oz (40g) Marg
3.5 fl oz milk

Method

1 Grease and line a 7" square tin
2 Melt sugar, syrup, marg and treacle - do not boil. Stir in the dry ingredients and then stir in the milk. The consistency should be that of a thick batter
3 Pour into tin and bake in oven at 160 degrees C or Reg 3 for about 25 mins.

Oh and fl oz? Dunno what that is!!!! England went metric when I lived in London so I never bothered...

Thanks Diane. I shall try that tonight. the quantities don't seem big enough to fill the tin. Have you noticed in the old recipes the quantities are a lot less than now, by that I mean they made smaller cakes.
cieldequimper - golden syrup, you can make your own - I do, it's simple and the treacle you can often find in specialist shops or the large supermarkets in the exotic range.

I love parkin - had never met it until I came up to Leeds as a young student in the 1950's! (But that is another story!) I must get around to making some.

My MIL used to make it ( a true Yorkshire lass), but I couldn't find her old recipe and I'm sure it didn't seem to rise as well as yours has (mine not hers), so I'll have another go now.

oooh lovely - I adore all ginger flavoured things :-)
Today I made gingerbread biscuits, a trial run for some Christmas gifts - doesn't the smell of ginger baking make the house feel so very cosy and comforting ?

I made parkin once before G and I were even an item. I took it into work and he shared it with colleagues. G tried some and pronounced it rope cake because he said it had the texture of eating rope! Still married me in the end though!

Diane, my American-ness is showing! (insert sheepish grin here). I don't know what treacle is ... like molasses, maybe?? I love ginger, as the entire house smells festive when it's baking!
